Since the 2006 vintage, this château rechristened itself Fourcas-Borie. It lies in the middle of the Listrac appellation, between Margaux and Pauillac. Primarily Cabernet Sauvignon, this wine has mellowed beautifully with bottle age. C’est magnifique!

We think this is amazing right-bank Bordeaux from Jonathan Maltus, one of the original garagistes. 1313.     Yves Cheron Les Dentelles Côtes du Rhône 2010 Rhône Valley

SUSTAINABLE. Yves, a Burgundian viticulturist, left Beaune in 1982 to develop his family’s new domaine in the southern Rhône. Les Dentelles is 70% Grenache and 30% Syrah with aromas of wild cherry, raspberry and blackberry cut with lively acidity. Great for spicy south Indian dishes.

1616.     Paul Jaboulet Aîné Les Jalets Crozes-Hermitage 2009 Rhône Valley

100% Syrah from the northern Rhône. “Jalets” are the glacially-deposited rocks that cover this vineyard site, much like they do further south in Châteauneuf-du-Pape. They hold the day’s warmth and ripen the fruit, leading to powerful, concentrated wine. Serve with braised lamb.

1818.     Domaine Nicolas Brunet Vouvray Sec 2011 Loire Valley

100% Chenin Blanc from winemakers with eight generations of history in the Loire. Ripe and mouth-filling, as good Vouvray should be. Almond, white plum, clove and Meyer lemon are enlivened by brisk acidity and purity of fruit. Great with fragrant, subtly spicy Bengali fish curry.

1919.     Domaine de la Chauvinière Muscadet Sèvre-et-Maine Sur Lie 2012 Loire Valley

Made from the Melon de Bourgogne grape and aged sur lie, on the yeast used to ferment the wine, which fleshes out the palate and adds complexity. This is a drier, leaner style of Muscadet, with a focused palate of lemon rind and white flowers. Always a boon companion to raw shellfish.

2121.     Domaine de Ballade Sauvignon Colombard 2012 Gascony

2222.     Château Paulin Entre-deux-Mers 2012 Bordeaux

Entre-deux-Mers means “between two seas”—the “seas” being Bordeaux’s Dordogne and Garonne rivers. Sauvignon Blanc plays lead with 30% Sémillon and 20% Muscadelle. Base notes of citrus and gooseberry are offset by wet rock and lime. Perfect with a platter of figs and soft cheeses.

5151.     Castello di Meleto Toscana Rosso Toscano 2008 Tuscany

Intense, fragrant and fruit-driven, this is a fun Super Tuscan. Primarily Sangiovese rounded out by Merlot, aged mostly in stainless with just a touch of oak. Ripe strawberry and plum with an intimation of Asian spice. Juicy but structured, it pairs nicely with buffalo tenderloin medallions.

Brunello di Montalcino is arguably the pinnacle of Sangiovese, and Talenti’s 2007 is intense wine from an outstanding vintage. 6161.     Giacomo Grimaldi Dolcetto d’Alba 2012 Piemonte

Dolcetto (“the little sweet one”) can make delightfully friendly, approachable Piemontese wines that lack neither structure nor nuance. With bold blueberry and currant surrounded by a distinct leathery component, this is molto bene with mushroom and sausage ragú over Parmesan polenta.

The grapes are hand-selected in the vineyard for maximum sun exposure before 120 days in the drying loft. Large neutral oak barrels are used for aging so as not to overshadow the rich dried fruit and spice notes in this velvety Amarone. Delicious with bacon-wrapped backstrap of venison or elk.
