073Clemens Busch and his wife Rita are on the frontline of biodynamic viticulture and minimal-intervention winemaking in the Mosel. Their 2011 Riesling Trocken (German: “Dry”) is loaded with mouthwatering citrus, ripe pear and a layer of stony minerality to boot. Pop a bottle with sautéed Korean catfish over sugar snap peas. $25
