DSCN1767-001Cave vinum (Latin): “Beware the wine.” Named after the inscription Cave canem (“Beware of the dog”) found in the ruins of Pompeii, this white blend makes its presence felt as soon as the cork pops and the bouquet begins to waft. But fear not: this is delicious wine, a white blend of 45% Viognier, 35% Roussanne, and 20% Clairette from the Ardèche region of France’s southern Rhône valley. Notes of sweet citrus, lemongrass and fennel are accented by a refreshing seam of acidity. A fascinating, savory, soil-driven wine that should perform well with spicy braised chicken thighs. $16
