DSCN1781-001With its proximity to both the sea and the mountains, this part of the Languedoc is protected from cool continental winds and receives more rain than the rest of the otherwise dry garrigue, or scrubland. This allows for a long, slow ripening of the grapes and adds complexity and age-worthiness to the finished wine. Aromatic notes of thyme, rosemary and mint, all herbs that grow wild in the region, usher in a fresh palate of ripe, dark berries and spice. A must-have with smoked pork barbecue. $22
